Other than Anchorage and Fairbanks, where I stayed in hotels, I mostly stayed in off-the-grid cabins in Alaska.
Cooper Landing
I stayed at a cabin at Cooper landing Fish Camp on the Kenai with full kitchen, but a separate building for bathroom and shower (which I didn’t know bout or didn’t read about). This set up made it interesting to go to the bathroom at night when it was cold and bears were around. I would have to get dressed and take my bear spray with me to use the facilities. While the bathroom had hot water, the walk back to cabin after a shower was cold.

Talkeetna
By far the most comfortable, Denali Fireside cabin was way off in the woods and out of cell range. This cabin had full kitchen and indoor bathroom, a nice deck and plenty of land.
Really liked the firewood and campfire which I used to keep the mosquitos away and enjoy an evening beer besides the fire.
Owner was a little eccentric, but great and very accommodating. See Talkeetna posts here.
Wiseman
The cabin at Boreal Lodge, was a true off the grid experience north of the Arctic circle, as the entire town (population 11) is off-the-grid. The cabin featured indoor plumbing and a small kitchen with fridge and stove. There was no cell service, no wi-fi and only renewable energy from solar and wind.
Owners were very nice and had a lot of local knowledge of Wiseman (one was born and raised there). I gifted them local Florida honey and mango preserves and they reciprocated with homemade local wild berry preserves. Very Yummy.
